A quick and flavorful egg fried rice recipe, ready in just 15 minutes. Packed with colorful vegetables, aromatic spices, and your choice of protein, this easy stir-fry is perfect for a satisfying weeknight meal.

Ingredients

Oils and Aromatics

  • 1 tsp Olive oil
  • 2 Cloves garlic (Crushed)
  • 1 tbsp Ginger (Paste or fresh)
  • 1 Onion (Finely chopped)
  • 1 tbsp Chinese five spice

Vegetables

  • 1 Red pepper (Sliced)
  • 1 Orange pepper (Sliced)
  • 2 Carrots (Chopped)
  • 150 g Peas (Frozen)

Sauces and Rice

  • 2 tbsp Dark soy sauce
  • 2 tbsp Oyster sauce
  • 500 g Microwave rice (2 x 250g packs)

Eggs and Garnishes

  • 4 Eggs
  • Spring onions (Scallion) (Sliced)
  • Red chilli (Finely chopped)

Optional Proteins

  • Cooked chicken (quantity as desired)
  • Ham (quantity as desired)
  • Prawns (quantity as desired)

Instructions

  1. Heat the oil: Warm 1 teaspoon of olive oil in a heavy-bottomed frying pan over high heat to prepare for stir-frying the aromatics and vegetables.
  2. Cook aromatics and vegetables: Add the finely chopped onions, crushed garlic, ginger paste, and Chinese five spice to the pan. Stir-fry for a few seconds, then add the sliced red and orange peppers, chopped carrots, and frozen peas. Fry everything together over high heat for about 4 minutes until the vegetables are tender but still crisp.
  3. Add rice and sauces: Pour in the microwave rice along with 2 tablespoons each of oyster sauce and dark soy sauce. Stir well to combine all the flavors, frying for another 3 minutes so the rice heats through and absorbs the sauces.
  4. Cook the eggs: Whisk the 4 eggs separately. Create two or three wells in the rice mixture and pour the eggs into these spaces. Let the eggs cook undisturbed for 1 minute to start setting, then stir continuously for about 4 minutes until the eggs are fully cooked and evenly mixed into the rice.
  5. Add garnishes and optional proteins: Sprinkle the sliced spring onions and finely chopped red chilli over the rice. If desired, fold in any cooked chicken, ham, or prawns now to warm them through.
  6. Serve and enjoy: Remove from heat and serve your fresh, vibrant quick egg fried rice immediately for a delicious and comforting meal.

Notes

  • This recipe is very versatile—feel free to substitute or add your favorite vegetables and proteins.
  • Using microwave rice cuts down the cooking time but freshly cooked rice cooled well can also be used for best texture.
  • Adjust the soy and oyster sauce to taste for saltiness and flavor depth.
  • For extra heat, increase the amount of red chilli or add a drizzle of chili oil before serving.
  • Ensure the pan is hot enough before adding vegetables to get a good sear without steaming them.
