Ground beef is cooked with aromatic garlic, ginger, and vegetables, then simmered in a tangy and slightly sweet soy-based sauce. Served over steamed white rice and garnished with spring onions and optional spicy sriracha, it’s a delicious, comforting dish that’s perfect for busy evenings.

Ingredients

Main Ingredients

  • 1 Tbsp sesame oil
  • 1 onion, finely diced
  • 1 carrot, finely diced
  • 500g lean beef mince
  • 2 tsp crushed garlic
  • 1 Tbsp crushed ginger
  • 1/4 cup low salt soy sauce
  • 2 Tbsp brown sugar
  • 2 tsp apple cider vinegar
  • 1 tsp cornflour
  • 1 beef oxo cube
  • 1/2 cup boiling water

To Serve

  • Cooked white rice
  • Sriracha (optional)
  • Spring onion, sliced for garnish

Instructions

  1. Cook vegetables: Heat sesame oil in a large frying pan over medium heat. Add the finely diced onion and carrot, stirring frequently, and cook for about 5 minutes until they start to soften.
  2. Brown the beef: Add the lean beef mince to the pan, breaking it up with a spoon. Cook for 5-10 minutes until the mince is browned all over and no pink remains.
  3. Add aromatics: Stir in the crushed garlic and ginger, cooking with the beef for about 1-2 minutes until fragrant.
  4. Make the sauce: In a small jug, combine the low salt soy sauce, brown sugar, apple cider vinegar, and cornflour. Pour this mixture over the browned beef and stir well to coat everything evenly.
  5. Add beef stock: Dissolve the beef oxo cube in the boiling water, then pour this broth into the frying pan with the beef. Mix thoroughly.
  6. Simmer and thicken: Let the mixture simmer for a few minutes, stirring occasionally, until the sauce thickens to a nice glaze consistency. Taste and season if needed.
  7. Serve: Spoon the Korean beef over fluffy white rice. Garnish with sliced spring onion and an optional swirl of sriracha for some heat.

Notes

  • For a gluten-free option, use tamari or a gluten-free soy sauce alternative.
  • You can substitute the beef with ground turkey or chicken for a leaner version.
  • If you prefer spicier flavors, add more sriracha or chili flakes during cooking.
  • Use freshly grated ginger for more vibrant flavor if available.
  • This dish pairs well with steamed or stir-fried vegetables for added nutrition.
