Ingredients

For the Puff Pastry Layers:

  • 2 tablespoons powdered sugar

  • 1 pint fresh raspberries

Instructions

  1. Prepare the Puff Pastry: Preheat your oven to 400°F (200°C). Roll out the puff pastry sheet on a lightly floured surface until it is about 1/8 inch thick. Cut the pastry into small, bite-sized rectangles approximately 1 inch by 2 inches. Place them on a parchment-lined baking sheet and prick the surface with a fork to prevent excessive puffing. Lightly sprinkle granulated sugar over the tops for added sweetness and crispness. Bake for 10-12 minutes until the pastries are golden brown and crisp. Allow them to cool completely on a wire rack.
  2. Make the Vanilla Whipped Cream: In a large mixing bowl, combine the chilled heavy cream, powdered sugar, and pure vanilla extract. Using an electric mixer or whisk, beat the mixture until soft peaks form, ensuring the cream remains light and airy without overwhipping.
  3. Assemble the Mille-Feuille Cookies: Once the puff pastry rectangles are cool, start assembling the cookies. Place one puff pastry rectangle on a clean surface, then pipe or spoon small dollops of the vanilla whipped cream, leaving space at the edges for the cream to peek through. Add a second puff pastry piece on top and repeat the whipped cream layer. Finish with a third puff pastry layer and a final dollop of whipped cream on top. Garnish each cookie with 2-3 fresh raspberries and, if desired, a fresh mint leaf for a touch of color and flavor. Repeat to assemble all remaining cookies.
