These festive holiday cookies come together quickly, with a simple assembly of Ritz crackers, Reese Cup Thins, and melted chocolate, finished with colorful holiday sprinkles. Perfect for cookie exchanges or holiday parties, they offer a deliciously crunchy, chocolatey, and creamy bite that everyone will love.

Ingredients

Cookies

  • 24 Ritz crackers
  • 12 Reese Cup Thins (classic Reese cups are too big)

Chocolate Coating

  • 12 oz. high quality melting chocolate (about 2 cups)

Topping

  • Holiday sprinkles

Instructions

  1. Preheat and prepare crackers: Preheat your oven to 300°F. Line a cookie sheet with parchment paper. Lay out 12 Ritz crackers, with the bottom side facing up, on the prepared sheet.
  2. Partially melt Reese Cups: Place one Reese Cup Thin candy on each of the crackers. Transfer the sheet to the oven and bake for about 1-2 minutes until the tops of the Reese Cups just begin to melt and look glossy. Avoid fully melting to prevent the chocolate from running.
  3. Assemble sandwich cookies: Remove from the oven and gently place another Ritz cracker on top of each Reese Cup, pressing lightly to seal the sandwich with the softened chocolate. Refrigerate for 15-30 minutes to allow the chocolate to solidify again.
  4. Melt chocolate for coating: Melt the remaining chocolate in a microwave-safe bowl using 20-second increments at 50% power, stirring between each session. Stop heating once the majority has melted and continue stirring to avoid overheating, which ruins the chocolate’s usability.
  5. Dip and decorate sandwiches: Dip each assembled sandwich cookie into the melted chocolate, allowing excess chocolate to drip off. Use two forks to maneuver the cookie and scrape the bottom to prevent puddling. Place on parchment paper and immediately sprinkle with holiday sprinkles.
  6. Cool and set final cookies: Repeat the dipping and decorating process with the remaining cookies. Allow the chocolate coating to harden completely at room temperature or speed up chilling by refrigerating.

Notes

  • Store these cookies in a cool place for up to 1 week. They can be frozen in an airtight container with parchment paper separating layers to prevent them from sticking together.
  • Ensure Reese Cups have fully cooled and re-set before dipping them into melted chocolate to avoid messiness and swirling, especially with white chocolate.
  • Melt chocolate slowly and at low heat to prevent it from overheating and becoming unusable. Stir frequently during melting.
  • Use a double boiler method when melting white chocolate for better results, as it is prone to seizing in the microwave.
