  • 1/4 teaspoon ground cumin (optional)
  • 1/2 teaspoon sea salt

Instructions

  1. Preheat the oven: Begin by preheating your oven to 425°F (220°C). This high temperature helps to roast the carrots so they get tender and develop a nice caramelized exterior.
  2. Season the carrots: Place the peeled and sliced carrots on a large sheet pan. Dark metal pans work best for roasting, and it’s preferred to keep the pan unlined for better browning. Toss the carrots with the oil ensuring they are thoroughly coated, then sprinkle with garlic powder, paprika, cumin if using, sea salt, and black pepper. Toss again to evenly distribute all the spices.
  3. Roast the carrots: Spread the carrots out in a single layer on the sheet pan to ensure even roasting. Roast in the preheated oven for 8 minutes, then carefully stir or toss the carrots to promote even cooking and browning.
