Ingredients

Vegetables

  • 1 large head cauliflower (about 2 pounds), cut into small florets (about 8 cups)

  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ¼ teaspoon crushed red pepper flakes

Cheese

  • ⅔ cup freshly grated Parmesan cheese

Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C) and position the rack in the center for even roasting.
  2. Season the cauliflower: On a large rimmed baking sheet, toss the cauliflower florets with olive oil until each piece is well-coated. Arrange them in a single layer, ensuring the pieces do not overlap to guarantee even roasting. Sprinkle the kosher salt, garlic powder, smoked paprika, and crushed red pepper flakes evenly over the florets.
  3. Roast the cauliflower: Place the baking sheet in the oven and roast for 20 minutes. After this, remove the sheet and carefully flip the florets using a spatula to promote even browning. Return it to the oven and continue roasting for an additional 10 minutes, until the cauliflower edges are browned, caramelized, and the florets are tender when pierced with a fork.
  4. Add Parmesan cheese: Remove the baking sheet from the oven, evenly sprinkle the freshly grated Parmesan cheese over the roasted cauliflower, then return the pan to the oven.
  5. Finish roasting: Roast the cauliflower for about 5 more minutes, until the Parmesan melts and turns golden brown.
  6. Serve warm: Transfer the roasted cauliflower to a serving platter and serve immediately while warm.
