Ingredients

Potatoes

Herb Dressing

  • 2 tablespoons extra virgin olive oil
  • 1/4 cup fresh dill, roughly chopped
  • 1/4 cup fresh basil, roughly chopped
  • 2 tablespoons chopped fresh chives
  • Salt and pepper, to taste

Topping

  • 8 ounces burrata cheese, torn

Instructions

  1. Preheat the oven: Set your oven to 450 degrees Fahrenheit to prepare for roasting the potatoes.
  2. Toss the potatoes: On a large baking sheet, combine 2 tablespoons of olive oil, the chopped potatoes, minced garlic, lemon juice, a pinch of kosher salt, and black pepper. Toss to coat evenly.
  3. Roast the potatoes: Place the baking sheet in the preheated oven and roast the potatoes for 20 minutes. After 20 minutes, toss the potatoes for even cooking and roast for another 20 to 25 minutes, or until they are golden and crisp on the outside.
