This Roasted Radishes recipe transforms humble radishes into a sweet, flavorful and tender side dish that’s perfect alongside chicken, beef, or pork. Roasted with ghee or butter, garlic, and herbs, these radishes develop a beautiful golden color and a mellow, rich taste.

Ingredients

Radishes

  • 1 lb. fresh globe radishes, stems removed, ends trimmed, and halved

Seasoning & Fat

  • 1 tablespoon melted ghee or butter
  • ½ teaspoon fine salt
  • ⅛ teaspoon black pepper
  • ¼ teaspoon dried parsley, dried chives, or dried dill (or mix of all)
  • 2 garlic cloves, finely minced

Optional Garnish

  • Ranch dressing for drizzling
  • Fresh parsley, dill, or chives for garnish

Instructions

  1. Preheat oven: Preheat your oven to 425℉ to prepare for roasting.
  2. Combine ingredients: In a bowl, toss the halved radishes with melted ghee or butter, dried herbs, salt, and pepper until evenly coated. Keep the minced garlic aside for later.
  3. Arrange radishes: Spread the radishes in a single layer in a 9×13-inch baking dish to ensure even roasting.
  4. Bake initially: Place the dish in the oven and bake for 10 minutes.
  5. Add garlic and toss: After the first 10 minutes, add the finely minced garlic to the radishes and toss well to incorporate the flavor.
  6. Bake further: Return the baking dish to the oven and continue roasting the radishes for another 10-15 minutes until they are golden brown and tender when pierced with a fork. Toss every 10 minutes during total roasting time for even cooking.
  7. Serve: Optionally, serve the roasted radishes drizzled with ranch dressing and garnished with fresh herbs like parsley, dill, or chives for added flavor and visual appeal.

Notes

  • Don’t add minced garlic at the beginning to prevent it from burning and becoming bitter.
  • Use a large baking dish to keep radishes in a single layer for even roasting.
