Ingredients

Gnocchi and Vegetables

  • 1 (16-oz) package gnocchi
  • 2 pints cherry tomatoes (any color)
  • 2-4 cloves garlic (to taste)

  • 1 (12-oz) tub marinated mozzarella

  • Black pepper (to taste)
  • Fresh basil (for garnish)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 450 degrees Fahrenheit and line a sheet pan with parchment paper to prevent sticking and ease cleanup.
  2. Add Gnocchi: Open the package of gnocchi and spread the entire contents evenly on the prepared sheet pan.
  3. Incorporate Cherry Tomatoes: Add 2 pints of cherry tomatoes to the pan alongside the gnocchi. If the pan becomes overcrowded, remove some tomatoes so each one has space to roast properly.
  4. Add Garlic: Smash the garlic cloves with the side of a chef’s knife and add them whole to the pan, adjusting the quantity based on your taste preference.
  5. Marinate and Oil: Open the marinated mozzarella tub, remove the cheese into a bowl, and pour most of the herbed oil onto the pan with the gnocchi and tomatoes. Use your hands to thoroughly coat everything with the herb oil, ensuring all pieces are well seasoned.
  6. Arrange and Season: Spread the gnocchi and tomatoes into a single layer on the pan and season generously with salt and pepper to bring out the flavors.
  7. Roast: Place the pan in the oven and roast for 17-20 minutes, until the tomatoes have burst and the gnocchi is golden and crispy on the edges.
  8. Cool and Add Mozzarella: Allow the gnocchi and tomatoes to cool slightly on the pan to prevent the mozzarella from melting too much. Then add the marinated mozzarella either directly onto the sheet pan or transfer all ingredients to a serving platter and toss gently to combine.
  9. Garnish and Serve: Finish with fresh basil leaves, grated Parmesan, and a drizzle of balsamic vinegar on each serving for an added tangy sweetness that complements the roasted flavors beautifully.
