A simple, fresh, and tangy lemon vinaigrette perfect for salads, marinades, or drizzling over vegetables. This easy-to-make dressing combines bright lemon zest and juice with honey, Dijon mustard, and olive oil for a balanced flavor that’s both vibrant and versatile.

Ingredients

Simple Lemon Vinaigrette Ingredients

  • 2 teaspoons lemon zest (approximately 1 medium lemon)
  • ½ cup fresh lemon juice (juice of 3-4 lemons)
  • ⅓ cup extra-virgin olive oil
  • 1 tablespoon pure honey or maple syrup
  • 1 teaspoon Dijon mustard
  • ¾ teaspoon fine salt
  • ⅛ teaspoon black pepper

Instructions

  1. Combine Ingredients: In a small bowl or a jar with a tight-fitting lid, add the lemon zest, fresh lemon juice, extra-virgin olive oil, honey or maple syrup, Dijon mustard, fine salt, and black pepper.
  2. Mix Thoroughly: Whisk the ingredients vigorously in the bowl or shake the jar with the lid secured tightly until the dressing is well emulsified and smooth.
  3. Store the Dressing: Transfer the vinaigrette to a sealed container or keep it in the jar. It can be stored in the refrigerator for up to one week.
  4. Re-mix Before Use: Before serving, let the vinaigrette sit at room temperature for about 15 minutes, then shake or stir again to redistribute the ingredients evenly for the best flavor.

Notes

  • Use freshly squeezed lemon juice and lemon zest for the best bright, fresh flavor.
  • The vinaigrette can be adjusted to taste—add more honey for sweetness or extra lemon juice for brightness.
  • Store in the refrigerator and always shake or whisk before serving as the ingredients may separate over time.
  • Try this dressing over mixed greens, roasted vegetables, grilled chicken, or as a marinade for fish.
  • If you prefer a smoother vinaigrette, blend the ingredients briefly in a blender or with an immersion blender.
