A simple and delicious recipe for soft-scrambled eggs, cooked gently in butter to achieve a creamy, tender texture. Perfect for a quick breakfast or brunch, enhanced with flaky salt, freshly cracked pepper, and fresh herbs for extra flavor.

Ingredients

Eggs

  • 6 large eggs
  • ½ teaspoon sea salt

Cooking

  • 3 tablespoons unsalted butter

To Serve

  • Flaky salt
  • Freshly cracked black pepper
  • 2 teaspoons finely chopped fresh herbs (chives, basil, or dill)

Instructions

  1. Beat the eggs: In a medium bowl, beat the eggs together with the sea salt until the mixture turns pale yellow, about 30 seconds.
  2. Heat the butter: Place a nonstick skillet over medium-low heat and melt the unsalted butter until it starts to bubble gently.
  3. Cook the eggs: Pour the beaten eggs into the skillet. Using a rubber spatula, gently push the eggs across the pan continuously. Cook the eggs slowly, pushing them around until they are just barely set but still soft and creamy, about 2 minutes.
  4. Serve: Immediately transfer the soft-scrambled eggs to three plates. Season with flaky salt, freshly cracked black pepper, and sprinkle with fresh chopped herbs if using. Serve warm for best taste and texture.

Notes

  • Use fresh eggs for the best flavor and texture.
  • Cooking over medium-low heat is crucial to achieve the creamy softness.
  • Do not overcook; remove the eggs from heat just before they are fully set as they will continue to cook with residual heat.
  • Fresh herbs can be customized to your taste—try parsley or tarragon as alternatives.
  • Serve immediately for optimal texture and flavor.
