Instructions

  1. Prepare the tomato puree: Combine the tomatoes, chopped onion, garlic cloves, and ground cumin in a blender or food processor. Puree until smooth, about 20 seconds. Set this vibrant tomato mixture aside for use in the soup.
  2. Toast the noodles: Warm vegetable oil in a large pot over medium heat. If using long noodles like vermicelli or angel hair, break them into 1-inch pieces in a separate bowl first.   4. Simmer the soup: Bring the soup to a gentle boil over medium heat. Then reduce the heat to medium-low and simmer uncovered.
