This Spiced Pear Baked Oatmeal is a warm, comforting breakfast dish featuring rolled oats baked with fragrant spices and fresh pears. Ingredients

Wet Ingredients

  • 2 large eggs
  • 1/3 cup / 65g unsalted butter, melted
  • 1 cup / 250ml milk
  • 1 tsp vanilla extract

Dry Ingredients

  • 1/2 cup / 110g brown sugar
  • 3 cups / 255g rolled oats
  • 1½ tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp mixed spice
  • 1/4 tsp nutmeg

Fruit and Toppings

  • 6 small pears (3 peeled and chopped, 3 sliced for topping)
  • 2 tbsp toasted walnuts, chopped (optional)

Instructions

  1. Preheat and Prepare the Baking Dish: Preheat your oven to 325°F (170°C). Butter a 9×13 inch baking dish, either round or rectangular, to prevent sticking and set it aside.
  2. Mix Wet Ingredients: In a large mixing bowl, whisk together the eggs, brown sugar, cinnamon, mixed spice, nutmeg, vanilla extract, baking powder, melted butter, and milk until well combined.
  3. Add Oats and Pears: Stir the rolled oats into the wet mixture, mixing thoroughly. Then gently fold in the peeled and chopped pears to incorporate them evenly without breaking.
  4. Assemble in Dish: Pour the oatmeal mixture into the prepared buttered baking dish. Arrange the remaining 3 sliced pears neatly on top for a decorative and flavorful finish.
  5. Bake: Place the dish in the preheated oven and bake uncovered for 30 to 35 minutes, or until the oatmeal is set and the top is lightly browned.
  6. Optional Topping: Once baked, sprinkle the chopped toasted walnuts over the top for added texture and a nutty flavor before serving.
