A vibrant and spicy chicken and cabbage stir-fry featuring tender chicken breast cooked with crisp cabbage and scallions, tossed in a flavorful chili-garlic sauce, served over fluffy brown rice. This quick and healthy stir-fry is perfect for a satisfying weeknight dinner.

Ingredients

Chicken and Marinade

  • 2 tablespoons neutral oil, such as canola or avocado, divided
  • pounds boneless, skinless chicken breast, thinly sliced
  • ¾ teaspoon kosher salt, divided

Vegetables and Sauce

  • 5 scallions, green parts cut into 1-inch pieces and whites thinly sliced
  • 8 cups thinly sliced green cabbage
  • 2 tablespoons chili-garlic sauce

To Serve

  • 2 cups hot cooked brown rice

Instructions

  1. Cook the Chicken: Heat 1 tablespoon of oil in a large flat-bottomed wok or skillet over high heat. Add the thinly sliced chicken and ¼ teaspoon kosher salt. Cook, stirring constantly, until the chicken is lightly browned and opaque throughout, about 3 to 4 minutes. Remove the chicken from the pan and transfer to a plate.
  2. Sauté Vegetables: Add the remaining 1 tablespoon of oil to the skillet. Add the green parts and sliced white parts of the scallions along with the thinly sliced cabbage and the remaining ½ teaspoon salt. Cook and toss the vegetables until they are just tender, approximately 3 minutes.
  3. Combine and Flavor: Return the cooked chicken to the skillet with the vegetables. Add 2 tablespoons of chili-garlic sauce and toss everything together to evenly coat the mixture and heat through.
  4. Serve: Divide 2 cups of hot cooked brown rice among 4 plates. Top the rice with the spicy chicken and cabbage stir-fry and serve immediately.

  • For a milder version, reduce the amount of chili-garlic sauce or substitute with a sweeter chili sauce.
