Crunchy and flavorful roasted chickpeas seasoned with a blend of spices, perfect as a healthy snack or salad topping. This recipe offers two cooking methods: air frying for a quick crisp or oven roasting for a classic approach.

Ingredients

Chickpeas

  • 2 14 oz cans chickpeas, drained and rinsed

Seasonings & Oil

  • 1 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • 1 tsp nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp cumin seeds
  • 1 tsp smoked paprika
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper

Instructions

  1. Prepare Chickpeas: Place the drained and rinsed chickpeas in a mixing bowl. Gently toss them with the olive oil until they are evenly coated. Add all the spices — dried oregano, nutritional yeast, garlic powder, cumin seeds, smoked paprika, sea salt, and black pepper — and toss again to ensure an even seasoning layer.
  2. Air Fryer Cooking: Transfer the seasoned chickpeas into the air fryer basket in a single layer. Set the air fryer to 400°F and cook for 10 minutes. After 10 minutes, check for crispiness and add an additional 3 minutes if needed, shaking the basket midway to promote even cooking.
  3. Oven Roasting: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup. Spread the coated chickpeas evenly on the baking sheet to avoid overcrowding. Roast in the oven for about 20 minutes, stirring or shaking halfway through, until they reach a crispy golden texture.

Notes

  • For best results, make sure chickpeas are well dried before seasoning to help them crisp up.
  • If using canned chickpeas, rinsing and drying thoroughly helps prevent sogginess.
  • Adjust spices according to taste preferences; smoked paprika can be substituted with regular paprika for less smokiness.
  • Store cooled roasted chickpeas in an airtight container to retain crispness for up to 3 days.
  • Both air fryer and oven methods yield crispy chickpeas, but the air fryer is quicker and may produce a slightly crunchier texture.
