Spicy Shrimp

  • 3 tablespoons olive oil, divided

  • 2 tablespoons fresh cilantro, chopped (or fresh parsley)

For the Rice Bowl

Instructions

  1. Prepare the spice mix: In a medium bowl, combine smoked paprika, oregano, chili powder, cayenne red pepper, crushed red pepper flakes, salt, and black pepper. Stir well to mix the spices evenly and set aside.
  2. Marinate the shrimp: In a large bowl, toss the peeled and deveined shrimp with 1 tablespoon of olive oil and the prepared spice mixture until all shrimp are well coated.
  3. Heat the skillet and sauté garlic: Place a large skillet over medium-high heat and add 2 tablespoons of olive oil. Heat the oil for about 1 minute then add the finely minced garlic and sauté for 2 minutes until fragrant.
  4. Cook the shrimp: Add the spiced shrimp to the skillet and cook for 3 to 4 minutes per side, turning carefully to cook evenly until shrimp are opaque and slightly caramelized.
  5. Finish with lime and cilantro: Remove the skillet from heat and toss the cooked shrimp with fresh lime juice and chopped cilantro for a bright, fresh flavor.
