Ingredients

Cookies

  • 1 1/2 cups + 2 tablespoons all-purpose flour
  • 2/3 cup cornstarch

  • 2/3 cup powdered sugar

Cream Cheese Frosting

  • 4 ounces cream cheese, softened
  • 4 tablespoons unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 1/2 cups powdered sugar

Topping

  • 3 tablespoons strawberry jam

Instructions

  1. Prepare the Dry Ingredients: In a medium bowl, combine the all-purpose flour, cornstarch, and salt. Set aside for later use.
  2. Make the Cookie Dough: In a large bowl, beat the softened butter, powdered sugar, and vanilla extract on medium speed until the mixture becomes light and fluffy. Reduce the speed to low and gradually add the dry ingredients. Beat until well combined. The dough will be crumbly, so use your hands to knead it gently into a smooth ball.
  3. Chill the Dough: Cover the dough ball with plastic wrap and refrigerate for 15 to 20 minutes to firm up slightly, making it easier to roll out.
  4. Preheat Oven and Prepare Baking Sheets: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper to prevent sticking and ensure even baking.
  5. Roll and Cut Cookies: Remove the dough from the fridge and roll it out to approximately 0.2 inches thickness on a lightly floured surface. Use a 2.4-inch cookie cutter to cut the dough into shapes. Place the cut cookies on the prepared baking sheets about 1.5 inches apart to allow for slight spreading.
  6. Bake the Cookies: Bake the cookies for 9 to 10 minutes or until the bottoms develop a light brown color, indicating they are baked through. Remove from the oven and allow the cookies to rest on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  7. Prepare the Cream Cheese Frosting: While the cookies cool, beat together the softened cream cheese, butter, and vanilla extract on medium speed until the mixture is smooth and creamy. Gradually add the powdered sugar, blending well until the frosting is light and luscious.
  8. Frost the Cookies: Once the cookies have completely cooled, spread an even layer of cream cheese frosting over each cookie.
