Strawberry Crunch Protein Bites are a delightful no-bake snack combining the crunch of Golden Oreo crumbs with the fresh taste of freeze-dried strawberries and creamy yogurt layers. These protein-packed bites are perfect for a quick energy boost or a sweet treat that’s easy to prepare and refrigerate.

Ingredients

Crunch Coating

  • 8 Golden Oreos
  • 1/2 cup crushed freeze-dried strawberries

Inner Strawberry Layer

  • 1/4 cup (or more) coconut flour, plus more if needed
  • 1/4 cup crushed freeze-dried strawberries
  • 3 tbsp (or more) whole milk plain Greek yogurt
  • 2 tbsp almond, cashew, or other nut butter
  • 2 tbsp heavy cream
  • 2 tbsp maple syrup

Outer White Layer & Assembly

  • 1 cup (or more) whole milk plain Greek yogurt
  • 1/2 cup (or more) coconut flour
  • 1/2 cup vanilla protein powder
  • 1/4 cup heavy cream

Instructions

  1. Prepare Crunch Coating: Place the Golden Oreos in a large resealable plastic bag and use a rolling pin to crush them into fine crumbs. Transfer these crumbs to a shallow dish and mix in the 1/2 cup of crushed freeze-dried strawberries until fully combined. Cover with plastic wrap to prevent clumping.
  2. Make Inner Strawberry Layer: In a medium bowl, combine 1/4 cup coconut flour, 1/4 cup crushed freeze-dried strawberries, 3 tbsp Greek yogurt, 2 tbsp nut butter, 2 tbsp heavy cream, and 2 tbsp maple syrup. Mix until a moist dough forms that holds together when pressed. Adjust moisture by adding 1 tbsp cream if too dry or 1 tbsp flour if too wet. Portion the dough into 1-tsp balls and arrange on parchment-lined baking sheet. Cover with plastic wrap.
  3. Prepare Outer White Layer: In another medium bowl, mix 1 cup Greek yogurt, 1/2 cup coconut flour, 1/2 cup vanilla protein powder, and 1/4 cup heavy cream until smooth and moist enough to hold together. Adjust by adding 1 tbsp yogurt if too dry or 1 tbsp flour if too wet.
  4. Assemble Protein Bites: Use a 1-tbsp measuring spoon to portion the white dough onto a parchment-lined baking sheet. Flatten one white dough portion in your palm, place one strawberry dough ball in the center, and wrap the white dough around it, sealing well. Roll each assembled bite in the strawberry and Oreo mixture to thoroughly coat.
  5. Chill and Set: Place the coated bites on a clean parchment-lined baking sheet, cover with plastic wrap, and refrigerate for at least 3 hours or up to 1 day until firm and cold.
