It’s an easy-to-make, crowd-pleasing dish perfect for potlucks, holiday celebrations, and summer BBQs, delivering a refreshing fruity and fluffy treat that sets in the refrigerator.

Ingredients

Jello Base

  • 3 oz Strawberry Jello packet
  • 1 cup hot water or pineapple juice from crushed pineapple can

Cream Cheese Mixture

  • 1 package (8 oz) cream cheese, softened
  • 1 cup heavy whipping cream

Mix-ins

  • 1 can (20 oz) crushed pineapple, drained
  • 1 cup mini marshmallows

Instructions

  1. Drain Pineapple: Place a strainer over a bowl and drain the crushed pineapple, saving the juice for later use as liquid in the recipe.
  2. Prepare Jello Mixture: In a saucepan, bring 1 cup of the pineapple juice or hot water to a boil. Remove from heat and whisk in the strawberry jello powder until completely dissolved.
  3. Add Cream Cheese: Dice the softened cream cheese into cubes and add them to the warm jello mixture. Use an electric hand mixer to beat the mixture until the cream cheese is fully incorporated and smooth.
  4. Combine Ingredients: Add the heavy whipping cream, drained crushed pineapple, and mini marshmallows to the jello-cream cheese mixture. Stir gently to combine all ingredients evenly.
  5. Chill and Set: Transfer the mixture to a bowl and refrigerate for about 4 hours or until firmly set.
  6. Serve: After setting, scoop the strawberry fluff salad into serving bowls and enjoy this creamy, fruity dessert salad.

Notes

  • For best results, ensure the cream cheese is fully softened before mixing to avoid lumps.
  • You can substitute water for pineapple juice if you prefer a less intense pineapple flavor.
  • Mini marshmallows add a pleasant texture contrast but can be omitted for a smoother consistency.
  • This salad tastes best when chilled overnight, allowing flavors to meld.
  • Store leftovers covered in the refrigerator for up to 3 days.
