A delicious and hearty stuffed delicata squash recipe filled with perfectly seasoned ground beef, pecans, dried cranberries, and green onions. This comforting dish is roasted to tender perfection and makes a satisfying meal for four.

Ingredients

Squash

  • 2 large delicata squash
  • 2 Tbsp avocado oil
  • 1/2 tsp sea salt

Stuffing

  • 1 lb ground beef
  • 1/2 yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1/3 cup chicken broth or water
  • 2 tsp Italian seasoning
  • 1/2 tsp sea salt
  • 1/2 cup raw pecans, chopped
  • 1/2 cup dried cranberries
  • 4 stalks green onion, chopped

Instructions

  1. Roast the Squash: Preheat the oven to 350°F (175°C). Trim the ends off the delicata squash and slice them lengthwise. Scoop out the seeds with a sturdy spoon. Drizzle each half with avocado oil and sprinkle with sea salt. Place them cut-side down on a baking sheet and roast for 30 to 40 minutes until the flesh is tender and easily scooped out.
  2. Prepare the Beef Mixture: While the squash roasts, heat avocado oil in a large skillet over medium-high heat. Add the chopped onion and cook, stirring occasionally, until softened and fragrant, about 5 minutes. Add the ground beef, letting it brown on one side for 3 to 4 minutes before flipping to brown the other side for the same time. Break the meat into smaller pieces with a spatula and combine with the onions.
  3. Season and Simmer: Stir in minced garlic, sea salt, and Italian seasoning. Cook for an additional 2 minutes. Pour in chicken broth or water and bring to a full boil, letting most of the liquid evaporate while keeping the meat moist. Remove from heat, then mix in chopped pecans, dried cranberries, and chopped green onions.
  4. Assemble and Serve: Once the squash is tender, scoop some of the flesh out if desired to make room, then fill each squash half generously with the ground beef and pecan mixture. Serve warm and enjoy!
