Ingredients

Instructions

  1. Prepare the Filling: In a small bowl, gently toss the sliced bananas with brown sugar, cinnamon, and lemon juice to enhance the flavor and prevent browning. Set aside briefly.
  2. Assemble the Egg Rolls: Lay one egg roll wrapper on a clean surface with one corner pointing toward you, forming a diamond shape. Place two to three banana slices near the corner closest to you. Fold the corner over the filling, then fold in both side corners snugly, and roll tightly toward the opposite corner. Use a little water to seal the edge securely. Repeat with remaining wrappers and filling.
  3. Heat the Oil: Pour vegetable oil into a deep skillet or pot to a depth of about 2 inches. Heat over medium-high heat until the oil reaches 350°F (175°C) or test by dropping a small piece of wrapper; it should sizzle and float to the surface.
  4. Fry the Egg Rolls: Carefully place two to three banana egg rolls into the hot oil, being careful not to overcrowd the pan. Fry for about 2-3 minutes per side or until golden brown and crispy. Use tongs or a slotted spoon to turn and remove the egg rolls.
  5. Drain and Serve: Transfer fried egg rolls to a plate lined with paper towels to absorb excess oil. Serve warm as is or with a drizzle of honey or a dusting of powdered sugar for extra sweetness.
