This Dessert Quesadilla is a delightful, sweet snack featuring soft flour tortillas filled with fresh bananas, strawberries, melted chocolate chips, and creamy peanut butter. Baked until crisp and warm, it combines fruitiness and rich chocolate with a hint of cinnamon sugar for a satisfying treat.

Ingredients

For the Quesadilla

  • 2 flour tortillas (such as Mission Super Soft)
  • Olive oil, enough to spread on one side of each tortilla
  • 1/4 cup semi-sweet or dark chocolate chips
  • 1 banana, sliced
  • 3-5 strawberries, sliced
  • 1/4 cup smooth peanut butter

For the Topping

  • 2 teaspoons sugar, divided into 1 teaspoon portions
  • 2 teaspoons cinnamon, divided into 1 teaspoon portions

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the quesadilla.
  2. Prepare Tortillas: Rub olive oil on one side of each tortilla to help them crisp up nicely when baked. Place one tortilla on a cutting board with the oiled side down.
  3. Add Peanut Butter and Fruit: Spread the smooth peanut butter evenly over the tortilla. Arrange the banana slices on top of the peanut butter, followed by the sliced strawberries. Sprinkle the chocolate chips over the fruit to add sweetness and richness.
  4. Close the Quesadilla: Place the second tortilla on top of the filled one, with the oiled side facing up. This will create a sandwich with the filling enclosed.
  5. Apply Cinnamon Sugar and Bake: Mix 1 teaspoon of cinnamon with 1 teaspoon of sugar. Sprinkle half of this cinnamon sugar mixture evenly over the top tortilla. Place the quesadilla on a baking sheet and bake in the oven for 7 minutes.
  6. Flip and Finish Baking: Carefully flip the quesadilla over to the other side. Sprinkle the remaining cinnamon sugar mixture on the top now exposed side. Return to the oven and bake for an additional 8 minutes until the chocolate chips have melted and the quesadilla is crisp and golden brown.
  7. Serve: Remove from the oven and let it cool for a minute or two. Slice as desired and enjoy the warm, melty dessert quesadilla.
