This classic Sweet Potato Pie recipe from Atlanta, GA offers a smooth, creamy filling made from boiled sweet potatoes, butter, sugar, and warming spices baked to perfection in a flaky 9-inch pie crust. Perfect for holiday gatherings, it delivers a comforting blend of sweet and spice that everyone will love.

Ingredients

Main Ingredients

  • 1 (1-pound) sweet potato, with skin
  • 1/2 cup butter, softened
  • 1 cup white sugar
  • 1/2 cup milk
  • 2 large eggs
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 (9-inch) unbaked pie crust

Instructions

  1. Gather Ingredients: Collect all the ingredients listed for easy access during preparation.
  2. Boil Sweet Potato: Place the whole sweet potato with the skin on in a pot, cover with water, and bring to a boil. Cook for 40 to 50 minutes until a fork easily pierces it.
  3. Prepare Sweet Potato Flesh: Preheat oven to 350°F (175°C). Remove sweet potato from water, cool under cold running water, then peel off the skin. Break apart the cooked flesh and place it into a mixing bowl.
  4. Mix Filling: Add softened butter to the sweet potato and beat with an electric mixer until smooth. Then add sugar, milk, eggs, nutmeg, cinnamon, and vanilla extract. Beat on medium speed until the mixture is creamy and smooth.
  5. Fill Pie Crust: Pour the sweet potato mixture into the unbaked 9-inch pie crust evenly.
  6. Bake: Place the filled pie into the preheated oven and bake for 55 to 60 minutes or until a knife inserted in the center comes out clean.
  7. Cool: Remove the pie from the oven and allow it to cool completely before serving. Note that the pie will puff up like a soufflé during baking and will deflate as it cools.

Notes

  • For an extra-smooth filling, use a food processor to blend the sweet potatoes and filling ingredients together.
  • The pie will be puffed up immediately after baking but will settle as it cools, this is normal.
  • Ensure the sweet potato is fully cooked and soft to achieve the best texture in your pie filling.
