This delicious Strawberry Sundae features a homemade strawberry sauce simmered to perfection and served over creamy ice cream, topped with chocolate flakes and fresh strawberries for a refreshing and indulgent dessert.

Ingredients

Strawberry Sauce

  • 500g fresh strawberries, stalks removed and chopped
  • 2 tsp vanilla essence
  • ¼ cup sugar
  • 2 tsp lemon juice

Sundae Assembly

  • 4 scoops ice cream
  • 30g chocolate flake
  • 4 fresh strawberries, to garnish

Instructions

  1. Prepare the strawberry sauce: Add the chopped strawberries, vanilla essence, sugar, and lemon juice to a small saucepan. Simmer over low heat for 10 minutes, stirring every couple of minutes to prevent sticking.
  2. Mash and thicken the sauce: Use a potato masher to crush the strawberries while still in the pan. Continue cooking for another 10 minutes until the sauce has thickened and reduced.
  3. Cool the sauce: Remove the saucepan from heat and let the sauce cool for 20 minutes in the pan. Then, transfer it to a jug and refrigerate until completely chilled.
  4. Assemble the sundaes: Scoop the ice cream into four sundae cups. Drizzle the cooled strawberry sauce generously over each scoop. Crumble the chocolate flake on top and garnish each with a fresh strawberry before serving.
