These delicious taquitos are filled with a flavorful mixture of chicken, cream cheese, spinach, and cheese, then fried to crispy perfection. Perfect for a snack or party appetizer!

Ingredients

Filling:

  • 3 cups shredded cooked chicken
  • 6 ounces cream cheese, softened
  • 1½ cups baby spinach, stems removed and chopped
  • 1½ cups shredded Colby Jack cheese, or Mexican blend cheese
  • ½ cup salsa, store-bought or homemade
  • ⅓ cup sour cream
  • Salt and pepper to taste

Additional:

  • 12 (6-inch) corn tortillas (or flour tortillas)
  • Vegetable or canola oil, for frying

Toppings:

  • Shredded lettuce
  • Chopped tomatoes
  • Sour cream
  • Pico de Gallo

Instructions

  1. Fill a saucepan with oil: Heat over medium heat to 350 degrees F.
  2. Mix filling ingredients: Combine chicken, cream cheese, spinach, Colby Jack cheese, salsa, and sour cream. Season with salt and pepper.
  3. Fill and fry: Add mixture to tortillas, roll, and fry until golden brown on both sides.
  4. Drain and serve: Place on paper towels to drain excess oil. Serve warm with toppings.
