Ingredients

Fruits

  • 3/4 cup ripe mango, preferably previously frozen (Champagne/Ataulfo/Honey variety)

Dairy

  • 1/2 cup whole milk
  • 1/3 cup + 1 tbsp plain, whole-milk yogurt

Sweeteners and Flavorings

  • 2-4 tbsp store-bought Indian mango pulp (sweetened)
  • 1.5-2 tbsp cane sugar

Other

  • 3 large or 7-8 small ice cubes (use lower amount if using frozen mango)

Instructions

  1. Add all ingredients to the blender. Gather your ripe mango, whole milk, plain yogurt, mango pulp, cane sugar, and ice cubes.
  2. Combine ingredients in a high-speed blender. Place mango, milk, yogurt, mango pulp (starting with the lower amount), cane sugar (start with lower amount), and ice cubes into the blender.
  3. Blend the mixture. Blend on high until the mixture is smooth and no longer icy, using the tamper or spatula to push ingredients down if necessary.
  4. Adjust taste and consistency. Taste the lassi and add remaining sugar for sweetness, extra mango pulp for intense mango flavor and color, or 1-2 tablespoons more yogurt for tartness; blend again briefly.
  5. Serve immediately. Pour the mango lassi into a glass and enjoy fresh. Alternatively, refrigerate covered for up to 24 hours before the freshness starts to decline.
