Ingredients

For the Coffee Mixture

  • 4-1/2 teaspoons instant coffee granules
  • 1/3 cup boiling water

For the Pudding Mixture

  • 2 packages (1 ounce each) sugar-free instant vanilla pudding mix
  • 4 ounces fat-free cream cheese

For the Parfaits

  • 1 package (3 ounces) ladyfingers, split and cubed
  • 2 cups fat-free whipped topping
  • 2 tablespoons miniature chocolate chips
  • 1 teaspoon baking cocoa

Instructions

  1. Prepare Coffee Mixture: Dissolve the instant coffee granules in the boiling water. Set aside and let the coffee cool to room temperature for soaking the ladyfingers later.
  2. Make Pudding Base: In a large bowl, whisk together the cold fat-free milk and sugar-free instant vanilla pudding mixes for about 2 minutes until combined. Let this mixture stand for 2 minutes or until it sets to a soft consistency. In a separate bowl, beat the fat-free cream cheese until smooth, then gradually fold it into the pudding mixture until fully incorporated and creamy.
  3. Soak Ladyfingers: Place the cubed ladyfingers into a bowl and pour the cooled coffee mixture over them. Toss gently to coat the ladyfingers well and allow them to absorb the coffee flavor by standing for 5 minutes.
  4. Assemble Parfaits: Divide half of the coffee-soaked ladyfinger cubes evenly among six parfait glasses or serving dishes. Top with half of the pudding mixture, followed by 1 cup of fat-free whipped topping and 1 tablespoon of miniature chocolate chips. Repeat these layers with the remaining ingredients in the same order.
