Protein-packed and just indulgent enough, these Trail Mix Pancakes are perfect for fueling up whether you’re on a trail, relaxing at camp, or enjoying a leisurely morning at home. Loaded with crunchy trail mix and drizzled with maple syrup, they offer a satisfying blend of flavors and textures.

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 3 tablespoons sugar
  • 4 teaspoons baking powder
  • 1 teaspoon sea salt

Wet Ingredients

  • 2 cups whole milk
  • 2 large eggs, beaten
  • 4 tablespoons salted butter, plus more for serving

Additional

  • 1½ cups trail mix
  • Maple syrup, for serving

Instructions

  1. Prepare Dry Ingredients: In a large bowl, whisk together the all-purpose flour, sugar, baking powder, and sea salt until thoroughly combined to ensure an even distribution of leavening agents.
  2. Combine Wet Ingredients: In a separate container, whisk the whole milk and beaten eggs together until smooth. Gradually pour this mixture into the dry ingredients, stirring gently until just combined. Be careful not to overmix to keep the pancakes tender.
  3. Heat the Skillet: Place a large skillet over medium heat and add 1 tablespoon of salted butter. Allow the butter to melt completely and start bubbling but not browning.
  4. Cook Pancakes in Batches: Pour ⅓ cup portions of batter onto the hot skillet, forming individual pancakes. Immediately sprinkle each pancake with 1 heaping tablespoon of trail mix, pressing lightly so it sticks. Cook until bubbles begin to form on the surface and the edges look set, about 1 to 2 minutes.
  5. Flip and Finish Cooking: Using a spatula, carefully flip each pancake and cook for an additional 1 to 2 minutes until the undersides are golden brown and the pancakes are cooked through.
  6. Repeat with Remaining Batter: Transfer finished pancakes to a plate and repeat the cooking process with the remaining butter, batter, and trail mix, adding more butter to the skillet as needed.
  7. Serve: Serve your trail mix pancakes warm with extra butter and a generous drizzle of maple syrup for a delicious and energizing breakfast.

Notes

  • Do not overmix the batter to keep pancakes light and fluffy.
  • Use a non-stick skillet or well-seasoned cast iron pan to prevent sticking.
  • Trail mix can be customized based on your favorite nuts, dried fruits, and seeds.
  • For a dairy-free option, substitute whole milk with almond or oat milk and use vegan butter.
  • Pancakes can be kept warm in a low oven (around 200°F) while you finish cooking the rest.
