This delightful Trifle in a Tray is a visually stunning and delicious layered dessert featuring raspberry jelly, mixed berry coulis, lamingtons, chocolate cake, fresh strawberries, custard, and whipped cream topped with a chocolate Flake bar. With its combination of fruity, creamy, and cakey textures, it’s perfect for serving a crowd and can be prepared ahead for convenience.

Ingredients

Jelly

  • 2 x 85g Raspberry Jelly packets
  • Water as per packet instructions

Berry Coulis

  • 500g frozen mixed berries
  • ¼ cup sugar

Layers

  • 2 x packets Mini Lamingtons (200g each)
  • 1 x store bought chocolate cake (360g)
  • 200g punnet strawberries, stalks removed
  • 500ml cream, whipped
  • 1kg custard
  • 30g Flake bar, chopped

Instructions

  1. Prepare the jelly: Make a double portion of raspberry jelly according to the packet instructions. Pour the jelly mixture into a large dish measuring approximately 23cm x 33cm. Place in the refrigerator to chill and set overnight for the best texture.
  2. Make berry coulis: Combine the frozen mixed berries and sugar in a saucepan. Simmer gently over low heat for 20 minutes until the mixture is soft and syrupy. Remove from heat and allow to cool completely. This step can be done a day in advance and stored covered in the fridge.
  3. Prepare cake and fruit: Chop the mini lamingtons and chocolate cake into bite-sized pieces. Slice strawberries in half, and whip the cream until soft peaks form.
  4. Assemble base layers: Remove the set jelly from the fridge. Arrange half of the sliced strawberries around the edge of the jelly in the tray so they are visible once assembled.
  5. Add lamingtons and strawberries: Scatter the chopped lamington pieces evenly over the jelly, then distribute the remaining strawberries across the lamington layer.
  6. Layer berry coulis and custard: Dollop the cooled berry coulis on top of the lamingtons. Pour the custard evenly over the coulis and spread it gently toward the edges to cover the layers below.
  7. Add chocolate cake and whipped cream: Scatter the chopped chocolate cake pieces onto the custard layer, then spread the whipped cream evenly over the top.
  8. Final touch and chilling: Sprinkle the chopped Flake bar over the whipped cream for a crunchy chocolate topping. Cover the tray and place it in the fridge until ready to serve, allowing the flavors to meld and the dessert to chill.

  • For best results, prepare jelly and berry coulis the day before assembling the trifle to save time and enhance flavors.
  • You can substitute frozen mixed berries with fresh berries if preferred, adjusting the cooking time for coulis accordingly.
  • Using store-bought custard saves time, but homemade custard can be used for a richer flavor.
