This Ultimate Tuna Melt Wrap is a deliciously cheesy and flavorful lunch or light dinner option featuring a savory tuna mayonnaise mix combined with crunchy gherkins, sundried tomatoes, fresh spinach, and bell pepper, all wrapped in a soft wheat tortilla and grilled to golden perfection.

Ingredients

Tuna Mixture

  • 1 tin of tuna (145g), in brine or spring water, drained
  • 2 tablespoons mayonnaise
  • 1-2 gherkins, finely chopped
  • 4 sundried tomatoes in oil, drained and finely chopped

Wrap and Fillings

  • 2 large wheat tortilla wraps (10 inch each)
  • Handful of spinach leaves
  • ¼ bell pepper, thinly sliced
  • 70 g Cheddar cheese, coarsely grated
  • Salt and freshly ground black pepper, to season
  • Little oil for brushing the pan

Instructions

  1. Prepare Tuna Mixture: In a mixing bowl, combine the drained tuna, finely chopped gherkins, sundried tomatoes, and mayonnaise. Season the mixture with salt and freshly ground black pepper to taste. Mix thoroughly until well incorporated.
  2. Assemble Wraps: Lay each wheat tortilla wrap flat. In the center of each, arrange a vertical line of fresh spinach leaves. Spoon half of the prepared tuna mixture over the spinach, then layer with thin bell pepper slices. Generously cover the filling with the grated Cheddar cheese.
  3. Fold the Wraps: Fold the top and bottom edges of the tortilla over the filling, then fold in the sides to form a secure and relatively flat wrap rather than a round pouch.
  4. Heat the Pan: Brush a griddle pan or non-stick frying pan with a small amount of oil and heat it over medium-high heat.
  5. Grill the Wraps: Place the wraps onto the heated pan. Set a heavy pan, such as a cast iron skillet, on top of the wraps to weigh them down. Cook for 2-3 minutes until golden brown grill lines or crisping appear on the bottom. Carefully flip the wraps and repeat the process on the other side for another 2-3 minutes.
  6. Serve: Once both sides are nicely browned and crisp, remove the wraps from the pan. Cut each wrap in half and serve warm, ideally accompanied by your favorite salad.
