Crust

  • 2 cups (453g) plain Icelandic skyr yogurt

Instructions

  1. Prepare the pan: Grease the interior of a 7 inch round springform pan. Line the bottom with a parchment round and the sides with strips of parchment paper to ensure easy removal of the cheesecake later.
  2. Make the crust: Crush the Oreos or graham crackers into fine crumbs using a food processor or by hand. If using Oreos, the crumbs should be sticky when pinched; if not, add condensed milk one tablespoon at a time until the mixture holds together. Press and compact the crumbs evenly across the bottom of the prepared pan to form a sturdy crust.
