This quick and easy 5 Minute Personal Tortilla Pizza recipe transforms simple flour tortillas into delicious personal-sized pizzas topped with classic pizza sauce, Parmesan, mozzarella, and your favorite toppings. Perfect for a fast and satisfying meal that’s ready in no time!

Ingredients

For the Base

  • 2 – 8″ or 10″ flour tortillas
  • ½ cup (125g) pizza or pasta sauce, divided

Cheese

  • 3 Tablespoons (17g) grated Parmesan cheese, divided
  • ½ cup (112g) shredded mozzarella, divided

Toppings

  • 20 pepperoni slices OR assorted other toppings, divided

Instructions

  1. Preheat the oven: Arrange one rack in the center position of the oven and preheat to 425ºF (218ºC). Place tortillas on a flat surface for the next steps.
  2. Spread the sauce: Spoon approximately ¼ cup (63g) of pizza or pasta sauce onto each tortilla. Use the back of the spoon to evenly spread the sauce around the tortilla, leaving a small margin around the edges for a crust.
  3. Add cheese and toppings: Sprinkle about 1½ tablespoons (8.5g) of grated Parmesan cheese onto each tortilla, followed by ¼ cup (56g) of shredded mozzarella. Then, top each pizza with pepperoni slices or your preferred toppings, dividing them evenly.
  4. Bake the pizzas: Carefully place the prepared pizzas directly on the oven rack and bake for 5 minutes, or until the edges turn golden and the cheese is melted and bubbly. Alternatively, you can bake each pizza individually in a toaster oven.
  5. Cool and serve: Remove the pizzas from the oven and allow them to cool for a few minutes before cutting into slices and serving.

Notes

  • Use corn tortillas instead of flour for a gluten-free option.
  • For crispier crusts, bake pizzas directly on the oven rack without a baking sheet.
  • Feel free to customize toppings with vegetables, cooked meats, or fresh herbs.
  • Watch the pizzas closely to prevent burning as cooking times may vary depending on your oven.
  • Leftover pizzas refrigerate well and can be reheated in a toaster oven for best results.
