Agua Fresca de Pepino is a refreshing Mexican cucumber lime cooler made with fresh cucumbers, lime juice, and a touch of sugar. Perfect for hot days, this light and invigorating drink is easy to make and can be served chilled with ice and mint leaves for an extra burst of freshness.

  • 1/3 cup fresh lime juice

Instructions

  1. Blend Ingredients: In a blender, combine the peeled and chopped cucumbers with 6 cups of water. Blend on high speed until the mixture is smooth and well combined.
  2. Strain the Mixture: Pour the blended mixture through a fine mesh sieve or cheesecloth into a pitcher. Press or stir to extract as much liquid as possible and discard the pulp.
  3. Add Lime Juice and Sugar: Stir in 1/3 cup of fresh lime juice and 2/3 cup of sugar into the strained liquid. Mix thoroughly until the sugar dissolves completely.
  4. Serve: Chill the cucumber lime cooler in the refrigerator. Serve over ice with optional cucumber and lime slices and garnish with fresh mint leaves for enhanced flavor and presentation.
