Crispy and delicious Air Fryer Zucchini Fries are a healthy snack or side dish option that are easy to make with just a few ingredients. These zucchini fries are coated with parmesan cheese and Italian seasonings, then air fried to golden perfection in just 8 minutes for a quick, guilt-free treat.

Ingredients

For the Zucchini Fries

  • 2 small Zucchini, cut into ½ inch thick fries (about 3 inches long each)
  • 1 cup freshly grated Parmesan Cheese
  • 1 large Egg, beaten
  • 1 teaspoon Onion Powder
  • 1 teaspoon Italian Seasoning
  • ¼ teaspoon Black Pepper

Instructions

  1. Preheat the air fryer: Set your air fryer to 375°F (190°C) and allow it to preheat for a few minutes before cooking.
  2. Prepare the zucchini: Cut the zucchini into sticks approximately 3 inches long and ½ inch wide, then pat them dry with a towel to remove excess moisture for better crisping.
  3. Set up coating stations: In one shallow dish, beat the egg. In a second dish, combine the parmesan cheese, onion powder, Italian seasoning, and black pepper.
  4. Coat the zucchini fries: Dip each zucchini stick into the beaten egg, then roll or sprinkle them with the parmesan and seasoning mixture until fully coated.
  5. Air fry the zucchini fries: Arrange the coated zucchini sticks in a single layer in the air fryer basket. You may need to cook them in two batches to avoid overcrowding. Cook each batch for 8 minutes at 375°F, until fries are crispy and golden brown.

Notes

  • Patting the zucchini dry helps achieve a crispier fry.
  • Cooking in batches prevents overcrowding and ensures even cooking.
  • Use freshly grated Parmesan for the best flavor and coating adhesion.
  • Serve immediately for optimal crispiness.
  • Optional: Serve with marinara sauce or your favorite dip.
