This moist and flavorful cake is enhanced with lemon zest and almond extract, topped with sliced almonds for a crunchy finish. Perfect for a gluten-free dessert that’s both elegant and easy to prepare.

Ingredients

Dry Ingredients

  • 2 ½ cups almond flour almond meal – about 250 g
  • ½ cup + 1 tbsp granulated sugar – about 120 g
  • ½ cup sliced almonds for topping

Wet Ingredients

  • 5 large eggs
  • 6 tbsp unsalted butter – about 80 g
  • ¼ cup crème fraîche or heavy cream, full-fat yogurt, or plant-based cream – about 60 g
  • 2 tsp bitter almond extract or regular almond extract
  • Zest of 1 lemon

Instructions

  1. Prepare the Pan: Preheat oven to 350°F (180°C). Line the bottom of an 8-inch round springform pan with parchment paper and lightly butter the sides to prevent sticking.
  2. Mix Eggs and Sugar: In a large mixing bowl, beat the eggs and sugar together until the mixture is pale and foamy, ensuring the cake will be light and airy.
  3. Add Almond Flour: Stir the almond flour into the egg and sugar mixture until fully combined.
  4. Incorporate Butter and Cream: Melt the butter in a small saucepan or microwave on low heat. Add the melted butter and crème fraîche to the batter and mix well until smooth.
  5. Flavor the Batter: Add the bitter almond extract and grated lemon zest, then mix again to evenly distribute the flavors.
  6. Prepare for Baking: Pour the batter into the prepared springform pan and smooth the top with a spatula. Evenly sprinkle the sliced almonds over the batter.
  7. Bake the Cake: Bake for 35–40 minutes, or until the top is golden and a toothpick inserted in the center comes out clean, indicating the cake is fully cooked.
  8. Cool and Serve: Let the cake cool in the pan for 10 minutes, then remove the springform ring and cool completely before serving to enhance flavor and texture.

Notes

  • This cake is naturally gluten-free due to the almond flour base.
  • Bitter almond extract adds a distinctive flavor, but regular almond extract can be used if unavailable.
  • Crème fraîche can be substituted with heavy cream, full-fat yogurt, or plant-based cream as per dietary preferences.
  • Ensure the eggs are fresh to get the best rise and texture.
  • Letting the cake cool completely helps it set properly and enhances moistness.
