Ingredients

Dry Ingredients

  • 4 cups salted mini pretzels
  • 1 1/2 cups old fashioned oats
  • 1/2 cup all-purpose flour or whole wheat flour
  • 1/4 to 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 2 sticks (1 cup) salted butter, at room temperature
  • 2 teaspoons vanilla extract

Fruit & Toppings

  • 10 to 12 ounces berry jam (such as strawberry, blackberry, or blueberry)
  • 1/2 cup fresh berries (chopped strawberries, raspberries, or other berries)

Instructions

  1. Preheat oven and prepare pan: Preheat your oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper to prevent sticking and for easy removal of the bars once baked.
  2. Process pretzels into flour and mix dry ingredients: Using a food processor or blender, grind the mini pretzels into a fine powder resembling flour. Measure out 1 cup of this pretzel flour and add it to a large mixing bowl. Then add the old fashioned oats, all-purpose or whole wheat flour, brown sugar (adjust amount between 1/4 to 1/2 cup based on desired sweetness), baking powder, and salt. Stir these dry ingredients together to combine evenly.
  3. Add butter and vanilla, then blend into dough: Add the softened salted butter and vanilla extract to the dry mixture. Using a hand mixer or stand mixer, beat the butter into the dry ingredients until a crumbly dough forms and everything is well combined.
  4. Assemble bars with jam and fresh berries: Press about one-third of the prepared dough evenly into the bottom of the lined baking dish, forming a firm base. Spread the berry jam evenly over this dough layer. Next, sprinkle the fresh chopped berries evenly over the jam. Finally, sprinkle the remaining dough over the top as a crumble layer.
  5. Bake until golden and set: Place the baking dish in the preheated oven and bake for 30 to 40 minutes, or until the top crumble is golden brown and set.
  6. Cool and cut into bars: Remove the bars from the oven and allow them to cool completely in the pan before lifting them out using the parchment paper. Once cooled, cut into 24 bars. Store the bars in a sealed container at room temperature for up to one week.
