Instructions

  1. Prepare the Oil: Add peanut oil to a large frying pan deep enough to hold at least 4 inches of oil. Heat the oil to 350°F, using a cooking thermometer to ensure precise frying temperature.
  2. Mix Breading: In a large Ziploc bag, combine the all-purpose flour, stone ground cornmeal, and Creole seasoning. Shake well to thoroughly mix the dry ingredients.
  3. Coat Crawfish (First Half): Add half of the crawfish tails to the bag with the breading mixture. Seal the bag and shake vigorously to evenly coat the crawfish pieces.
  4. Fry Crawfish (First Half): Carefully place the coated crawfish tails into the hot oil. Fry for 1 minute, or until golden and crispy. Use a slotted spoon to remove and transfer them to paper towels to drain excess oil.
  5. Coat and Fry Crawfish (Second Half): Repeat the coating and frying steps with the remaining crawfish tails, ensuring all are cooked to the same golden crispness and drained well.
  6. Prepare Sauce: In a small bowl, mix the mayonnaise and hot sauce until fully blended into a spicy mayonnaise sauce.
