A wholesome and flavorful Avocado Toast Bowl combining creamy whipped cottage cheese, crispy brown rice, fresh arugula and cherry tomatoes, perfectly cooked jammy eggs, and crunchy toasted panko breadcrumbs, finished with everything but the bagel seasoning and a kick of chili crunch oil. A delicious twist on traditional avocado toast served in a convenient bowl, perfect for a satisfying breakfast or light meal.

Ingredients

Base

  • 1/3 cup cottage cheese
  • 1/2 cup brown rice, cooked

Vegetables & Greens

  • 1 cup arugula
  • 1/2 cup cherry tomatoes, halved
  • 1/2 avocado, sliced

Egg

  • 1 egg

Toppings

  • 1/4 cup panko breadcrumbs
  • 1 tbsp everything but the bagel seasoning
  • 1-2 tbsp chili crunch oil

Seasonings & Oils

  • Salt (to taste)
  • Pepper (to taste)
  • Approximately 3 tsp olive oil (divided for cooking and mixing)

Instructions

  1. Whip Cottage Cheese: Place the cottage cheese in a food processor with 1/2 teaspoon of olive oil and whip for about 3 minutes until smooth and fluffy. This creates a creamy base for the bowl.
  2. Cook Brown Rice: Heat a pan on medium-high heat and add 1 tablespoon of olive oil. Add the cooked brown rice and cook for 5 minutes, stirring occasionally, until the rice becomes crispy and slightly golden.
  3. Toss Arugula and Tomatoes: In a bowl, toss the arugula and halved cherry tomatoes with 1 teaspoon olive oil, a pinch of salt, and a pinch of pepper to lightly season and dress the greens.
  4. Cook Jammy Egg: Bring a pot of water to a boil. Carefully add the egg and cook for exactly 6 1/2 minutes to achieve a jammy yolk. Remove the egg and place it immediately in an ice bath. Once cooled, peel and cut the egg in half.
  5. Toast Breadcrumbs: In a pan, heat 1 teaspoon olive oil over medium heat. Add the panko breadcrumbs and cook until golden brown and crispy, stirring frequently. Remove from heat and season with salt and pepper to taste.
  6. Assemble Bowl: Spread the whipped cottage cheese evenly on the bottom of a serving bowl. Layer the crispy brown rice on top, followed by the tossed arugula and cherry tomatoes. Arrange the sliced avocado and jammy egg halves on the bowl. Sprinkle the toasted breadcrumbs over everything. Finish by adding the everything but the bagel seasoning and drizzle 1-2 tablespoons of chili crunch oil evenly on top.
  7. Serve: Add a final light sprinkle of salt and pepper if desired and enjoy your Avocado Toast Bowl immediately for the best texture and taste.
