Ingredients

Dry Ingredients

  • 2 cups old-fashioned rolled oats (do not substitute quick oats)
  • ½ cup walnuts (toasted and coarsely chopped, divided)
  • 1½ teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon fine sea salt

Wet Ingredients

  • 2 cups milk
  • ⅓ cup pure maple syrup
  • 1 egg
  • 3 tablespoons unsalted butter (melted, divided)
  • 2 teaspoons vanilla extract

Fruits

  • 2 Gala apples (peeled, cored and cut crosswise into ½-inch pieces)
  • 1½ cups raisins (divided)

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 375°F (190°C). Grease an 8-inch or 9-inch baking dish and set it aside to be ready for layering the ingredients.
  2. Combine Dry Ingredients: In a medium bowl, mix the rolled oats, half of the chopped toasted walnuts, ground cinnamon, baking powder, and sea salt thoroughly. Set this dry mixture aside.
  3. Mix Wet Ingredients: In a separate medium bowl, whisk together the milk, pure maple syrup, egg, half of the melted butter, and vanilla extract until well combined.
  4. Layer Apples and Raisins: Arrange the peeled and sliced apples in a single layer on the bottom of the greased baking dish. Sprinkle 1 cup of the raisins evenly over the apples.
  5. Add Oat Mixture: Spread the oat mixture evenly over the apples and raisins with a fork or spoon. Slowly drizzle the wet milk mixture evenly over the oats. To help distribute the liquid, gently tap or rap the baking dish on the counter a couple of times.
  6. Top and Bake: Sprinkle the remaining walnuts and raisins on top of the oat layer. Place the baking dish in the preheated oven and bake for 35 to 45 minutes, or until the top turns golden brown and the oatmeal is set and firm to the touch.
  7. Finish and Serve: Remove the baked oatmeal from the oven and allow it to rest for at least 5 minutes. Drizzle the remaining melted butter over the top for added richness before serving warm.
