  • 4 medium sweet potatoes
  • 4 tablespoons extra virgin olive oil
  • 4 garlic cloves, grated
  • 6 sprigs fresh thyme, leaves only
  • 30 g Parmigiano Reggiano / Parmesan cheese, finely grated
  • Salt and pepper to taste

Instructions

  1. Preheat the oven: Preheat your oven to 180°C (350°F) to prepare for baking your sweet potato slices evenly.
  2. Prepare sweet potatoes: Wash and slice the sweet potatoes into thin, evenly sized circles using a mandolin or a sharp knife to ensure uniform cooking.
  3. Mix seasoning: In a large bowl, combine the sweet potato slices with extra virgin olive oil, thyme leaves stripped from the sprigs, grated garlic, and finely grated Parmesan cheese. Season with salt and pepper, and mix well using your hands to coat each slice thoroughly with the seasoning mixture.
  4. Arrange slices: Lightly spray an oven-safe baking dish with oil spray. Taking a handful of the prepared sweet potato slices at a time, overlap them leaning on each other in a spiral pattern starting from the outer edge of the dish towards the center.
  5. Bake covered: Cover the arranged sweet potatoes with tin foil and bake at 180°C (350°F) for 30 minutes to allow them to soften and infuse with flavors.
  6. Crisp topping: Remove the tin foil, increase the oven temperature to 210°C (410°F), lightly spray the tops of the sweet potatoes with oil spray, and return to the oven uncovered for an additional 20 minutes to achieve a crisp, golden finish.
  7. Serve: Once baked to crispy perfection, remove from the oven and serve warm as a tasty side dish.
