Ingredients

Crust

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 1/4 cup sugar

Pineapple Cream Cheese Layer

  • 2 (8 ounce) packages cream cheese, softened
  • 1 (8 ounce) can crushed pineapple, drained
  • 1/4 cup sugar

Fruit Toppings

  • 16 ounces strawberries, hulled and sliced
  • 3 sliced bananas
  • maraschino cherries, (around an 8 ounce can)

Whipped Cream

  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Toppings

  • Chocolate syrup
  • Nuts

Instructions

  1. Prepare the Crust: Grease a 9×13 baking dish with butter or cooking spray. In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Press this mixture firmly into the bottom of the pan. Place the crust in the fridge or freezer to set while preparing the filling.
  2. Make the Pineapple Cream Cheese Layer: Using a mixer, cream together the softened cream cheese, drained crushed pineapple, and sugar until smooth and well combined. Spread this mixture evenly over the chilled graham cracker crust.
  3. Layer the Fruit: Arrange the sliced strawberries and bananas over the pineapple cream cheese layer. Quantities are approximate, so adjust based on preference and coverage.
  4. Prepare the Whipped Cream: In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract with a mixer until soft peaks form. Take care not to overwhip. Spread the whipped cream evenly over the fruit layer.
  5. Chill and Serve: Chill the dessert until ready to serve. Before serving, drizzle with chocolate syrup, sprinkle with nuts, and garnish with maraschino cherries on each individual slice.

Notes

  • Ensure the cream cheese is softened to room temperature for easier mixing and a smoother texture.
  • Use fresh fruit for best flavor and texture; bananas can brown if prepared too far in advance.
  • Chilling the crust before adding the filling helps maintain structure and prevents sogginess.
  • Do not overwhip the cream to avoid turning it into butter.
  • This dessert is best enjoyed within 1-2 days of preparation for freshness.
