This easy and refreshing Beet Juice recipe offers two methods to extract the vibrant, nutrient-packed juice from fresh beets. Whether you use a juicer for quick extraction or a blender followed by straining, this recipe is perfect for a healthy boost rich in antioxidants and natural sweetness.

Ingredients

Ingredients

  • 2.5 lb beets
  • 1/4 to 1/3 cup water (for blender method)

Instructions

  1. Wash the beets: Thoroughly clean the beets by filling a bowl with water and using a vegetable brush to remove all dirt. Rinse them well under running water to ensure they are clean before juicing.
  2. Chop the beets: Roughly chop the washed beets into 4-8 pieces to prepare them for juicing or blending, ensuring manageable sizes for your equipment.
  3. Juicer method: Feed the chopped beet pieces through the chute of your juicer. The machine will extract the juice efficiently. Once juiced, pour into a glass and enjoy immediately for the freshest taste.
  4. Blender method: Place the beet pieces into a blender and add 1/4 to 1/3 cup of water to help with blending. Blend until the mixture is smooth and juicy.
  5. Strain the juice: Transfer the blended beet mixture into a nut milk bag or a fine mesh strainer lined with cheesecloth. Squeeze or press to strain the juice out from the pulp. Discard the pulp or save it for other recipes. Pour the strained juice into a glass and enjoy!

Notes

  • Use fresh, firm beets for the best flavor and juiciness.
  • You can store leftover juice in an airtight container in the refrigerator for up to 48 hours.
  • The juice may have a strong earthy flavor; adding a splash of lemon juice or apple juice can balance it nicely.
  • If you don’t have a juicer, the blender method is a great alternative but requires straining.
  • Be aware that beet juice can temporarily stain your hands and surfaces.
