A delightful and creamy Berry Cheesecake Salad combining fluffy sweetened cream cheese with fresh mixed berries. This no-bake, chilled salad is perfect for a refreshing dessert or a light treat, blending the tanginess of cream cheese with the sweet burst of strawberries, raspberries, blackberries, and blueberries.

Ingredients

Cheesecake Mixture

  • 8 ounces cream cheese, softened
  • ¾ cup granulated sugar
  • 2 cups heavy cream, chilled
  • 1 teaspoon vanilla extract

Fruit

  • 16 ounces strawberries, quartered
  • 6 ounces raspberries
  • 6 ounces blackberries
  • 6 ounces blueberries

Instructions

  1. Beat Cream Cheese and Sugar: In a stand mixer fitted with the whisk attachment (or using a hand mixer), beat the softened cream cheese and granulated sugar on medium-high speed until smooth and fluffy, about 1–2 minutes. Scrape down the sides of the bowl as needed to ensure even mixing.
  2. Add Heavy Cream: With the mixer running on low speed, slowly pour in the chilled heavy cream in a steady stream. Continue mixing on medium-low speed for 30-45 seconds while scraping the bottom of the bowl to fully incorporate the cream cheese into the cream. Then increase the mixer speed to high and beat until the mixture is thick, fluffy, and stiff peaks form, approximately 1 minute. Add the vanilla extract and mix just until combined.
  3. Fold in Berries: Using a rubber spatula or large spoon, gently fold the quartered strawberries, raspberries, blackberries, and blueberries into the whipped cream cheese mixture, being careful not to crush the berries or deflate the fluffiness.
  4. Chill and Serve: Cover the assembled salad and refrigerate for at least 1 hour to allow the flavors to meld and the mixture to set. Serve chilled as a refreshing dessert or side dish.

Notes

  • Make sure the cream cheese is fully softened for a smooth and fluffy mixture.
  • Use chilled heavy cream to achieve optimal whipping results.
  • Gently folding the berries prevents them from breaking and keeps the salad visually appealing.
  • Feel free to substitute any berries with your favorite or seasonal fruits.
  • This recipe can be made ahead of time and stored in the fridge for up to 24 hours.
