Ingredients

Liquid Base

  • 17 cups water

Fruit and Peels

  • 1 large pineapple (peel and core)
  • 2 oranges (any variety)
  • 1 lemon

Spices and Herbs

  • 2 Tbsp turmeric (grated)
  • 3 Tbsp ginger (grated)
  • 2 sprigs rosemary (or substitute thyme, basil, lemon thyme)
  • 2 cinnamon sticks
  • 1/2 tsp cayenne pepper (or fresh black pepper)

Sweeteners (Optional)

  • 3 Tbsp honey or maple syrup (can be added when serving)

Instructions

  1. Prepare the Pineapple: Scrub the pineapple thoroughly using a vegetable brush. For extra cleanliness, soak it in a large pot filled with water, 1-2 Tbsp vinegar, and optionally 1 Tbsp salt for 20-30 minutes, then rinse with clean water.
  2. Peel and Core the Pineapple: Pat the pineapple dry and carefully remove the peel using a sharp paring knife. Keep the core as it also adds flavor and nutrients to the tea.
  3. Juice the Citrus: Extract juice from the lemon and oranges using a juicer or by hand, and set aside.
  4. Combine Ingredients in Pot: Pour 17 cups of water into a large pot. Add the pineapple skin and core, grated turmeric and ginger, lemon and orange juice, rosemary sprigs, cinnamon sticks, and cayenne or black pepper.
  5. Simmer the Tea: Bring the mixture to a boil over medium heat, then reduce to a simmer. Let it simmer gently for about 1 hour to allow all flavors to meld and the tea to develop a rich taste.
  6. Strain the Tea: After simmering, remove the pot from heat and let the tea cool slightly. Use a fine sieve or cheesecloth to strain out solids and transfer the liquid into clean glass bottles or containers.
  7. Serve or Store: The tea can be enjoyed immediately, warm or cold. Optionally, add honey or maple syrup to sweeten it according to your preference before serving. It also stores well refrigerated for later consumption.
