This Best Roasted Garlic recipe delivers perfectly soft, golden, and spreadable garlic cloves with minimal effort. Roasting whole garlic bulbs in olive oil at 400°F brings out a rich, sweet flavor that enhances any dish, from spreads and sauces to roasted meats and vegetables. The simple seasoning with salt and pepper allows the natural garlic to shine. This method is easy to prepare and creates a versatile ingredient to elevate your cooking.

Ingredients

Ingredients

  • 3 whole garlic heads
  • 1 tablespoon olive oil
  • Fine salt, to taste (optional)
  • Black pepper, to taste (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot enough for roasting the garlic evenly.
  2. Prepare Garlic Bulbs: Peel away any loose outer papery layers from the garlic heads without separating the cloves. Slice about 1/4 inch off the top of each bulb to expose the individual garlic cloves.
  3. Season Garlic: Place each garlic head, cut-side up, onto a piece of aluminum foil. Drizzle the exposed cloves with olive oil and lightly season with fine salt and black pepper if desired.
  4. Wrap Garlic: Loosely wrap the garlic bulbs in the foil to create packets that will trap steam while roasting.
  5. Roast Garlic: Place the foil packets in the oven and roast for 40 to 50 minutes. Check starting around 35 minutes – the cloves should be soft, golden, and easily spreadable when done.
  6. Optional Browning: For a deeper roasted color, carefully open the foil packets for the last 5 to 10 minutes of roasting.
  7. Cool & Use: Let the roasted garlic cool enough to handle. Then, squeeze the soft cloves out of their skins and incorporate them into your favorite recipes or use as a spread.

Notes

  • Use fresh garlic bulbs for the best flavor and texture.
  • Wrapping garlic loosely prevents it from becoming soggy while still keeping moisture in.
  • Roasted garlic can be stored in an airtight container in the refrigerator for up to one week.
  • You can freeze roasted garlic cloves for longer storage and use them later in cooking.
  • Adjust seasoning to taste, but the natural sweetness of roasted garlic often needs minimal enhancement.
  • Oven temperature and roasting time may vary slightly based on your oven; always monitor garlic starting at 35 minutes.
