Ingredients

Meat and Tortillas

  • 1 pound (450g) ground beef
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon sweet paprika
  • Salt and pepper to taste
  • Clarified butter or vegetable oil (for cooking meat and tortillas)
  • 8 small tortillas (6-inch/15cm)

Toppings

  • 3 small/medium tomatoes
  • 2 cups shredded iceberg lettuce
  • ½ cup pickle slices
  • 2 cups (200g) shredded cheddar cheese or 8 slices American cheese

Big Mac Sauce

  • ½ cup (105g) mayo
  • 2 tablespoons ketchup
  • 2 tablespoons finely chopped pickles
  • ½ tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon pickle brine
  • 1 tablespoon sour cream or yogurt (optional)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Big pinch of sweet paprika
  • Big pinch of smoked paprika
  • Big pinch of powdered sugar
  • Salt and pepper to taste

Instructions

  1. Make the burger sauce: In a medium bowl, stir together the mayo, ketchup, finely chopped pickles, Dijon mustard, Worcestershire sauce, pickle brine, sour cream (if using), garlic powder, onion powder, sweet paprika, smoked paprika, powdered sugar, and salt and pepper. Set aside to allow flavors to meld.
  2. Prep the toppings: Finely shred the iceberg lettuce, dice the tomatoes, slice the pickles, and shred the cheese with the large holes of a box grater. Make sure to drain or pat dry the lettuce, tomatoes, and pickles if they are watery to prevent soggy tacos.
  3. Prepare the meat: In a bowl, season the ground beef with onion powder, garlic powder, smoked paprika, sweet paprika, and pepper, but hold off on adding salt.
  4. Spread the beef onto the tortillas: Divide the seasoned ground beef into 8 equal portions. Spread each portion thinly and evenly over one tortilla, pressing all the way to the edges. The meat will shrink as it cooks, so spreading it thin helps achieve good coverage.
  5. Cook the tacos: Heat clarified butter or vegetable oil in a skillet or griddle over medium-high to high heat. Just before cooking, season the meat generously with salt. Place the tortilla meat-side down in the hot pan. Press firmly with a spatula or burger press to brown the meat evenly. Cook for 1–2 minutes until well browned, then flip the taco over. Immediately add cheese on top. Cook another 1–2 minutes until the tortilla is golden and crisp and the cheese has melted. To help shredded cheese melt quickly, cover briefly with a lid or heatproof bowl, or use a crème brûlée torch as preferred.
  6. Keep warm: Place cooked tacos on a baking sheet in an oven set to about 200°F (95°C) to keep warm while finishing the rest.
  7. Assemble and serve: Top each taco with pickle slices, shredded lettuce, diced tomatoes, and a generous spoonful of the prepared Big Mac sauce. Serve immediately for best texture and flavor.
