These Black Bean Brownies offer a deliciously fudgy and healthier twist on traditional brownies, using black beans as a nutrient-rich base. Naturally sweetened with pure maple syrup and packed with dairy-free chocolate chips and optional walnuts, they deliver a moist, rich chocolate flavor perfect for any dessert craving.

Ingredients

Main Ingredients

  • 1 15 oz can black beans (drained and rinsed)
  • 3 large eggs
  • ½ cup pure maple syrup
  • ⅓ cup melted coconut oil
  • ¼ cup cocoa powder (or raw cacao powder)
  • ⅛ teaspoon fine sea salt
  • ½ teaspoon baking powder
  • 1 teaspoon vanilla extract
  • ½ cup dairy-free chocolate chips
  • ⅓ cup chopped raw walnuts (optional)

Instructions

  1. Prep: Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan to ensure the brownies don’t stick after baking.
  2. Blend: In a food processor or blender, combine the drained and rinsed black beans, eggs, pure maple syrup, melted coconut oil, cocoa powder, fine sea salt, baking powder, and vanilla extract. Blend until the mixture is completely smooth and well combined.
  3. Stir: Remove the blade from the food processor or blender, then gently fold in the dairy-free chocolate chips and chopped walnuts if using. Alternatively, you can sprinkle the walnuts on top of the batter after pouring it into the pan for extra texture.
  4. Bake: Pour the blended brownie batter into the prepared baking pan. Bake in the preheated oven for approximately 35 minutes, or until the brownies are set in the center and a toothpick inserted comes out clean.
  5. Cool and Serve: Let the brownies cool completely in the pan before cutting them into 16 squares. Enjoy as a rich, fudgy treat with a nutritious twist.

Notes

  • Make sure to rinse and drain the black beans well to avoid any canned bean flavor in the brownies.
  • You can substitute walnuts with other nuts like pecans or omit them for a nut-free version.
  • For an extra chocolatey touch, sprinkle some additional chocolate chips on top before baking.
  • These brownies store well in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
  • Allowing the brownies to cool completely improves their texture and makes cutting easier.
