This Impossibly Easy Lemon Pie is a light, creamy dessert made with simple pantry ingredients and fresh lemon juice and zest.   • 2 1/2 cups whole milk
  • 5 large eggs
  • 1 cup granulated sugar
  • 3/4 cup Bisquick™ Original Pancake & Baking Mix
  • 1/2 cup unsalted butter, melted
  • 1/3 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • Powdered sugar, for dusting

Instructions

  1. Preheat and prepare pie plate: Heat your oven to 350°F (175°C). Grease a 9-inch deep-dish pie plate thoroughly with butter to prevent sticking, and place it on a baking sheet to catch any drips during baking.
  2. Combine ingredients: Place all the pie ingredients except the powdered sugar into a blender. This includes milk, eggs, granulated sugar, Bisquick mix, melted butter, fresh lemon juice, and lemon zest.
  3. Blend the batter: Cover the blender and blend on low speed for 30 to 60 seconds until the mixture is smooth. Pause occasionally to scrape down the sides to ensure all ingredients are well combined.
  4. Pour and rest: Pour the blended batter into the prepared pie plate. Allow the batter to stand for 5 minutes, which helps it settle and improves texture.
  5. Bake the pie: Place the baking sheet with the pie plate into the preheated oven. Bake for 40 to 45 minutes or until the pie has puffed up and is slightly jiggly in the center, indicating it’s set but still creamy.
  6. Cool the pie: Remove the pie from the oven and transfer it to a cooling rack. Let it cool completely for about 1 hour to allow the custard to firm up.
  7. Chill and serve: Refrigerate the pie for at least 2 hours before slicing to ensure clean cuts and further set the custard. Just before serving, dust the top lightly with powdered sugar for a decorative finish.
