Ingredients

For the Lavender Simple Syrup

  • 1 Cup Sugar
  • 1 Cup Water
  • 4 teaspoons Dried Lavender Flowers

For the Mocktail

  • ¼ Cup Fresh Blueberries
  • 1 tablespoon Lemon Juice
  • 1 tablespoon Lavender Simple Syrup
  • ¾ Cup Club Soda
  • Ice, as needed

Instructions

  1. Make the Lavender Simple Syrup: In a 1-quart saucepan, combine the sugar, water, and dried lavender flowers. Place the pan over medium heat and bring the mixture to a boil, stirring occasionally. Allow it to boil for 1 minute to dissolve the sugar and infuse the lavender flavor.
  2. Steep the Syrup: Remove the saucepan from heat and cover it with a lid. Let the syrup steep for 15 minutes to deepen the lavender aroma. Then, strain the mixture through a fine mesh strainer into a container, pressing the flowers with the back of a spoon to extract all the syrup. You can use this syrup immediately or refrigerate it for up to 2 weeks.
  3. Prepare the Mocktail Base: In the bottom of a tall glass, add the fresh blueberries and lemon juice. Using a spoon, gently muddle the blueberries until they are broken down and release their juices, creating a flavorful base.
  4. Assemble the Mocktail: Add 1 tablespoon of the lavender simple syrup, ¾ cup of chilled club soda, and ice to the glass. Stir gently to combine all the flavors, then serve immediately for a refreshing and aromatic mocktail experience.
