Ingredients

For the Toast

  • 2 slices sourdough bread
  • 1 tablespoon butter (divided)

For the Topping

  • 2 eggs
  • 2 tablespoons Garlic & Herb Boursin cheese
  • ½ cup arugula
  • ¼ cup cherry tomatoes (quartered)
  • Drizzle of balsamic glaze
  • Salt and pepper (to taste)

Instructions

  1. Prepare the skillet and toast the bread: Heat a skillet over medium to medium-high heat. Add ½ tablespoon of butter and spread it around the skillet until it melts completely, ensuring the surface is coated for even toasting.
  2. Toast the sourdough bread: Place the slices of sourdough bread in the skillet. Let them brown on one side for 2-3 minutes or until golden and toasty. Flip the bread and toast the other side for 1-2 minutes. Once toasted, remove the bread from the skillet and set aside.
  3. Cook the eggs: Turn the skillet heat down to low and add the remaining ½ tablespoon of butter, letting it melt. Crack the eggs into the skillet and cook them to your preferred doneness, whether that’s sunny side up, over easy, or fully cooked.
  4. Assemble the Boursin Egg Toast: Spread 1 tablespoon of Garlic & Herb Boursin cheese evenly over the top side of each toasted sourdough slice. Place the cooked egg on top of the cheese layer. Add fresh arugula and quartered cherry tomatoes over the eggs. Drizzle a little balsamic glaze on top for a sweet tangy finish. Season with salt and pepper to taste.
